Two weeks into the New Year and – for some of us – those goals we set not so long ago are already starting to seem like ancient memories. Eat healthy, exercise more, spend less money, yeah, yeah. I’m not a fan of giving yourself a hard time or making your life harder in any way. One of my goals this year is to actually make my life easier, and that’s not by sacrificing a healthy lifestyle! Ingredients

Serve with: additional cacao nibs, strawberries + coconut yogurt

Method

Preheat over to 300 and line a baking sheet with parchment and set aside.

Mix the oats, almonds, coconut sugar, cacao powder, flaxseed, salt, cinnamon, and cacao nibs together in a large bowl.

Combine coconut oil and superfood honey in small saucepan; bring to a simmer over medium heat.

Remove from heat and stir in the vanilla. Add to the oat mixture and mix will until throughly coated.

Spread onto lined baking sheet and bake until golden brown, stirring after 20 minutes. Bake 5 – 10 more minutes.

Let cool completely before serving. Store in an air tight container at room temp. Enjoy!
