• 1 cup almonds (or 1 1/2 cups almond meal)
  • 2 1/2 tablespoons coconut oil, melted
  • 2 tablespoons maple syrup
  • 1/4 organic lemon, zested
  • 1 tablespoon chia seeds
  • 1/4 tsp baking powder
  • 1/4 tsp salt

Preheat oven to 350F.

Add almonds to food processor/high speed blender and process until a fine meal forms.

Pour almond meal into a bowl and combine with the rest of the ingredients.  You can adjust the amount of lemon zest depending on your taste.  I also added a squeeze of lemon.

Use a tablespoon to scoop the dough and roll into balls.  Place on a lined baking sheet and use a fork to gently press down the cookies.

Bake for about 12 – 15 minutes until the cookies have started to turn golden.
