I love having friends over for summer gatherings. My favorite types of meals are presented DIY style – like a taco bar or make your own salad with a couple tasty of dressings. You can do all the prep in advance and sit back and relax once your friends arrive. When it comes to dessert, I feel the same way and an ice cream sundae bar is one of my favorite go-tos. Plus, you don’t need to turn on the oven in this insane heat.

This is kind of like an ice cream sundae bar 2.0. For the pints, I use three of So Delicious’ new flavors – the Toasted Coconut Key Lime, the Chocolate Drizzled Bananas Foster, and Blueberry Cardamom. All are completely vegan and plant based. For my topping bar, I uplevel it with the granola recipe from my cookbook, and superfoods like goji berries, hemp hearts, mulberries, toasted coconut flakes and antioxidant rich berries. When it comes to assembling toppings, I like to pick about 3 – 4 that complement the frozen dessert base (or bases) well. A good rule of thumb is topping with ingredients that are actually used in the frozen dessert, like bananas on the Bananas Foster and blueberries on the Blueberry Cardamom 🙂 It will accentuate the flavor, and the pairing is a guaranteed success.

 

Here are three pairings that are perfect (and featured at this sundae party):

  • Toasted Coconut Key Lime topped with toasted coconut flakes, raspberries, and granola
  • Chocolate Drizzled Bananas Foster topped with sliced banana, hemp hearts, toasted coconut flakes, and granola
  • Blueberry Cardamom topped with blueberries, goji berries, toasted coconut flakes, and hemp hearts

 

Feel free to make this your own – toppings like cacao nibs, dark chocolate chips, chia seeds, gf cookie chunks, strawberries, and mango would all be delicious! It’s all in the name of an effortless, delicious gathering and with a superfood bar like this, I wouldn’t be mad if you dig in for breakfast the next day too!

  • 1 banana, sliced
  • Small bowl of blueberries
  • Small bowl of raspberries
  • Your favorite granola (mine is from my cookbook!)
  • Toasted coconut flakes
  • Hemp hearts
  • Goji berries
  • Dried mulberries

Choose your dairy free frozen dessert flavor(s) and top with desired toppings! Enjoy!
