rainbow chopped salad with vegan tzatziki dressing
I just returned from Bali and a beautiful wedding weekend in Georgia. Even if I come back from a trip relaxed and brimming with inspiration, spending that amount of time out of the kitchen leaves me with an itch to get back to cooking asap. The food in Bali was incredible – from the local dishes like turmeric coconut rice, gado gado, and curries to the Australian influence at cafes Canggu with elixirs and dragon bowls galore. I can’t wait to share more, but in the meantime, I’m sharing the first thing I crave when I come back from a long trip: a very sturdy chopped salad, in this case, a seriously rainbow one.
This salad is filled to the brim with fresh produce. The first thing I do when I’m home from being away is hit the market and stock my fridge with fresh fruits and veggies. I’ve been chatting with my health coaching clients about this – it’s a good strategy any week but especially busy weeks or weeks you are playing catch-up. Many have moaned to me that they have done this but their efforts have been thwarted when they return to the fridge a couple of days later to find wilted greens, shriveled berries, and dried up herbs. All that shopping down the drain..
I’ve experimented with lots of different storage solutions to keep produce fresh longer and have landed on these FreshWorks Produce Savers to help extend the life of my veggies. This week, I picked up a couple bunches of kale, carrots, cucumbers, radishes, and blueberries and transferred them right into the FreshWorks containers to store safely in my fridge. It’s best to transfer them directly into the containers – before washing and prepping – to extend shelf life as long as possible.
Beyond this rainbow salad, I’ll use these blueberries in my overnight oats, carrots as crudite for my turmeric hummus, cucumbers for spicy cucumber noodles, and sauteed kale with my morning eggs. I love the versatility of these ingredients and knowing that stored this way they will last for the week and beyond. At first look it may seem like there are a lot of ingredients in this chopped salad, but they are all versatile staples that you can use for many dishes throughout the week (like the above!) and will be prepped for you to grab and go.

Ingredients
Serves 4 - 6
- 2 small sweet potatoes, cut into small cubes
- Omega Oil or oil of choice
- Pink salt and freshly ground black pepper
- 2 bunches of kale, washed, destemmed, and chopped
- 2 cups of cooked quinoa
- 2 carrots, thinly sliced
- 2 radishes, thinly sliced
- 2 handfuls of cherry tomatoes, quartered
- 1 avocado, chopped
- ½ small red onion, thinly sliced
- ½ English cucumber, chopped
- ½ apple, cubed
- Handful of blueberries
- Handful of pepitas, or other nut
Tzatziki Dressing
- ⅓ English cucumber, seeded and grated
- 1 cup plain non-dairy yogurt (I like this one)
- ¼ cup olive oil
- 1 grated garlic clove
- Juice of 1 lemon (about 2 tablespoons)
- Handful of chopped dill
- Pink salt and freshly ground black pepper to taste
Method
For the dressing: Squeeze out the excess liquid from the cucumber using your hands or a cheesecloth (this will prevent the dressing from getting too watery). Combine cucumber with the rest of the dressing ingredients. Season to taste and set in the fridge for at least an hour for the flavors to meld together.
For the salad: Preheat the oven to 425F. Toss the sweet potatoes in oil, salt, and pepper and roast for 25 minutes or until cooked through. Note: cook time will depend on how finely you dice the potatoes (see pictured). Meanwhile, prep your veggies!
In a large bowl, massage the kale with a dash of olive oil and pink salt until the kale turns bright green and is slightly wilted. Gently toss in the remaining ingredients along with enough tzatziki dressing to just coat. Season to taste and enjoy!
Note: You can store this salad in your Produce Saver and add the quinoa, avocado and dressing just before eating.

Watermelon radishes because they are so beautiful and make any bowl or salad look 10x more vibrant!! And lots of fresh berries + cherries! My hack for 'storing' them is to just wash them all off the minute I get home and then store them in an easily accessible bowl in the refrigerator for on-the-go snacking :)

I definitely plan on keeping blueberries, radishes, and arugula in my fridge all summer! They make awesome snacks and additions to any meal 🥘 I always make sure to wash my produce when o get home from the store, and keep a paper towel st the bottom of the produce container, so that there isn't excess moisture around the produce that could cause it to go bad early!

Love summer produce and plan to keep lots of blueberries, cherries, avocados, and shishito peppers on hand at all times! My hack is to prep everything as soon as you get home and to keep containers with produce that expires quickly eye level as a reminder to use those items first.

Asparagus, peppers, zucchini, squash, carrots, and cauliflower are always a staple. I dice mine the second I get home and store them in a Tupperware for easy access to use in stir fry, salads, and quiche. We'll also have watermelon all summer because...toddlers!!

In the summer I love squash and snap peas are the best for snacking and of course corn! I also cant get enough of cherries and stone fruit in the summer. Peaches and nectarines are my favorite! My trick for storage is to remember where it was in the grocery store. Like if you find potatoes on the shelf then they dont need to go in the fridge. Curious about these storage containers!

Peaches, greens and tomatoes (hopefully from my garden). I am hoping to try different storage techniques. I have had some success with plastic bags with paper towels.

There is absolutely nothing better than summer tomatoes and cherries! I'll also stock up on arugula, summer squash, strawberries, and peaches in July/August. Would love to have something to keep everything fresher longer! :) ps love your blog and cookbook!

I will be storing lots of berries and would love a solution for making them last. I store carrots and celery in a Tupperware veggie storage container, unwashed with a paper towel to absorb moisture.

I've just gotten into making fruit infused water, been googling different recipes. I'll be on the hunt for beriies, citrus, watermelon, and herbs like mint and basil. I'm excited about a brand new farmer's market that just opened by me, so will be exploring. I typically use Rubbermaid containers so would love to know more about Freshworks Produce Savers. Especially how to store herbs!

I grow my own veggies and herbs. I can and freeze most of my produce but cannot my lettuce, arugula, spinach, shallots, head lettuce, so would dearly love to be able to keep it fresh 80% longer. Wow! Less waste! For the poster above regarding storing herbs. I cut my herbs in the morning while the dew is still on it (whatever herb it is), tie them in bunches and hang it upside down on a wooden clothes hanger (one of those that is in the shape of an x? It stands and you can hang delicates on it to dry.) in a cool, dry room (I put mine in the basement) once they are completely dry, crumble and put them in shaker containers. You can also freeze them in ice cube trays in water in teaspoon or whatever amounts, and pop them into freezer bags till needed. They do stay green this way also. Frozen in pre-measured amounts makes cooking with them easier too.

Avocado, cucumber, watermelon and peaches (peaches are my Everest!) I would love for them not to get squished next to everything else. Nothing worse than grabbing what you think is a perfectly ripe peach and discovering that it turned to mush under all the small bruises. Haven't found a hack for this yet- just storing them separately, I guess.

Avocados, kale, watermelon, peaches, and all berries are my summer staples but I still struggle with keeping kale (and spinach for that matter) fresh for more than a few days. I have these big Rubbermaid bowls that I line with paper towels that I put my produce in but it only extends the shelf life by a day or so. Would love to try out these new Rubbermaid ones!
