Summer in the city leaves the green markets overflowing with vibrant greens, psychedelic chioggia beets, rainbow carrots, summer squash, and the most beautiful array of berries. I can never walk through the market without picking up a quart of blueberries. Summer also means poolside cocktails, grill seshes and late summer nights. It’s all good but come Monday (or any day of the week really) I’m looking to this antioxidant smoothie bowl to boost my energy, reset my body, and calm inflammation.

 I toss all the ingredients into my KitchenAid® Pro Line® Series Blender, blend it to creamy perfection and top it with my favorite farmer’s market finds. This smoothie is loaded with antioxidants from a blast of berries, particularly from the soaked goji berries and the blueberries. It incorporates coconut butter and cinnamon for a dose of healthy fats, amazing flavor, and blood sugar balancing power. Rose water is also a great but optional addition that helps rebalance and calm digestion and reduce inflammation after a long weekend. I also love keeping rose water on hand to add a splash to glasses of cool water all summer long.

 Make this bowl in the AM and eating it stoop side – or anywhere outside – as I’ve been doing in my Chelsea hood. Eat it up quick before it gets melty in this crazy summer heat to keep cool and feel energized!

Ingredients
Serves 2
  • 1 cup of unsweetened vanilla almond milk
  • 1 frozen banana
  • ½ cup frozen blueberries
  • ½ cup frozen strawberries
  • 2 tablespoons goji berries, soaked overnight
  • 1 – 2 tablespoons pure rose water (optional)
  • 1 tablespoon coconut butter (or almond butter)
  • 1 inch fresh ginger
  • Dash of cinnamon

Top with berries (blackberries, strawberries, blueberries), cacao nibs, toasted coconut flakes, goji berries + bee pollen.

Method

Blend all ingredients together until smooth. Top with berries etc and enjoy!
