one bowl banana bread
I finally made banana bread during quarantine… and I think this is my best one yet. I made in a skillet so you can actually eat it like a slice of cake.. this would be perfection topped with some @montysnyc. This recipe for gluten free One Bowl Banana Bread is adapted from @barrettprendergast!
Ingredients
- 4 ripe bananas, smashed
- 1/3 cup olive oil
- 1/2 cup maple syrup
- 1/4 cup plant based yogurt (I used Forager’s plain)
- 2 eggs
- 1 tsp vanilla extract
- 2 cups gluten free AP flour (I used @cup4 cup gf wholesome flour)
- 3/4 tsp baking soda
- 1/2 tsp salt
- About 1/2 cup chocolate chips (optional)
Method
Preheat oven to 350. Grease pan (I used a skillet bc I didn’t have a loaf pan on hand).
Add all wet ingredients to mashed bananas. Then add dry and mix until combined. Pour into baking dish and cook until golden and cooked through (until a toothpick comes out clean). I needed about 40 mins in a skillet – maybe 60 in a loaf plan.
