soaked oats with lavender date almond milk + berries

Soaked Oats with Berries
- 1 cup of gluten free rolled oats
- 2 tbsp chia seeds
- 2 tbsp hemp hearts
- 2 tbsp raw pepitas
- 2 tbsp goji berries
- 2 cups lavender-date almond milk
- Strawberries, bee pollen + lavender, for topping
Lavender-date Almond Milk
- 1 cup of raw almonds
- 2 tsp lavender
- 2 – 4 medjool dates, depending on your desired sweetness
- 4 cups filtered water
Method
For the Soaked Oats with Berries
Mix the oats, chia seeds, hemp hearts, pepitas and goji berries together in a large jar or container. Cover with 2 cups of the lavender-date almond milk, stir, and place in the fridge overnight. In the morning, top bowls with sliced strawberries, bee pollen and a sprinkle of lavender.
For the Lavender-Date Almond Milk
Place the almonds in a jar or bowl and cover with water and a teaspoon of salt. Soak overnight. Set a nut milk bag or a cheesecloth over a large bowl. Drain the almonds in a strainer and rinse well. Blend the almonds, lavender and dates on high for about 30 seconds to a minute. Strain through the nut milk bag into the large bowl. Pour the milk into a container and store in the fridge for a few days.
