This gluten free apple tart is one of my go-to recipes when my fruit bowl is overflowing with apples this time of year. Truthfully I never measure when I’m making this tart – it’s usually a little of this a little of that, making it sweeter if I’m making it for dessert or not adding any maple syrup if the apples are sweet or I’m planning to turn it into a breakfast. Feel free to modify to your taste!

Ingredients
Serves 2 - 4

Apple Filling:

  • 2 large apples, sliced
  • Generous squeeze of lemon
  • Generous dash of maple syrup
  • ¼ teaspoon cinnamon

Crumble Topping:  

  • ½ cup gluten free oats
  • Handful of coconut flakes
  • 1/2 tablespoon chia seeds
  • 1/2 teaspoon cinnamon
  • 1 tablespoon of salted caramel (or 1 tablespoon maple syrup)
  • 2 tablespoons of coconut oil
Method

Preheat oven to 350F. Toss apples, lemon, maple syrup and cinnamon together and place in a small baking dish.

Pulse oats, coconut flakes, chia seeds, cinnamon and caramel together in a food processor. Add coconut oil and pulse a few more times.

Pour crumble over apples and bake until warmed through and golden, about 30 or so minutes. Top with a big spoonful of coconut yogurt, more date caramel and pomegranate seeds.
